In the event that the manufacturer provides a 2-year warranty on both parts and labor, along with a 5-year warranty on the compressor, one can expect the equipment to function in line with the manufacturer's predetermined standards.

Guidelines for the refrigeration requirements vary depending on the type of food. Meat and poultry should be stored at a temperature of 35 percent, while fresh fruits and vegetables require 30 percent. Dairy products need 20 percent, while frozen foods being thawed require 10 percent. Carry-over foods should be stored at 5 percent. The amount of refrigerator storage space required depends on factors such as the menu type, delivery frequency, and the use of canned, frozen, and dehydrated foods. Additionally, the type of milk used, whether it is fresh, canned, or dehydrated, and if it comes in bulk or individual cartons also affects the storage space needed.

Approximately 25 to 30 pounds of food can be stored in one cubic foot of space. This estimation takes into consideration both loosely packed items like lettuce and densely packed items like butter. It is important to note that the net cubic-foot capacity refers solely to the usable storage space.

Choosing a commercial freezer and refrigerator with good insulation is crucial as it ensures consistent temperature and humidity throughout the entire cabinet, irrespective of its level of fullness.

In a refrigerator circuit, there are three key components: the evaporator, compressor, and condenser. The evaporator is made up of coils with surrounding fins, through which the refrigerant passes. Initially, the refrigerant is in liquid form but as it absorbs heat from inside the refrigerator, it changes into a gas. This gas then moves from the evaporator coils to the compressor, which is a mechanism resembling a pump situated on the outer part of the cabinet. The compressor pressurizes the gas, reducing its volume. The gas then proceeds to the condenser, which is located next to the compressor on the outside of the cabinet. The condenser comprises coils with fins, and the compressed gas flows through them. An adjacent fan cools the gas as it passes through the coils. As the gas cools down, it returns to its liquid state. The liquid then flows back into the evaporator coils under pressure, and the cycle begins again.

It is crucial to ensure that the fins on the evaporator and condenser remain clean and free from any ice, dirt, or grease. These substances have the potential to obstruct the regular airflow and lead to a motor overheating or a complete halt in the refrigeration process.

The ideal temperature range for food storage is 33-40°F (1-5°C), with a relative humidity of approximately 80%. Relative humidity measures the amount of moisture the air is currently holding compared to its maximum capacity. In order to maintain the desired humidity level, the evaporator coils need to be sized appropriately, ensuring that they operate slightly cooler than the cabinet temperature while still providing sufficient cooling power. This slight temperature difference minimizes condensation on the coils and keeps the moisture level higher inside the cabinet.

The interior cabinet space for food storage and handling is maximized with the use of top-mounted refrigeration systems. The cabinet is equipped with a condensing unit, condensate evaporator, coil housing with plasticized coil, and automatic defrost, all of which are positioned on top of the cabinet.
